Cassava fries in Garlic Oil
(Yuca con Mojo de Ajo)
Yuca (cassava) with garlic oil is a staple peasant side dish. It is usually eaten with bacalao (salt codfish), fried fish, or chicken.
4 large garlic cloves, peeled and chopped
1 sprig fresh thyme
1/2 cup sunflower or other vegetable oil
3 pounds yuca (cassava)
2 quarts water combined with 1 tablespoon salt
1 cup corn oil
Serves 6
Combine the garlic, thyme, and oil. Set aside. Peel the yuca and cut it in "steak fry" 3 x 1/2-inch strips. Boil the salted water in a large soup pot, add the yuca, and cook for 30 minutes. Do not overcook; the yuca should have a firm texture. Drain and pat dry with paper towels. Heat the oil in a heavy skillet. Sauté the yuca until golden brown. Drain on paper towels. Arrange the strips on a platter, and pour the garlic oil over the "fries."
