Meat Turnovers |
| Crust: 4 cups all purpose flour - 2 tsp Salt - 4 tsp Annatto oil*** - 1-cup water Filling: 1 potato, pealed and chopped - 1 lb. Ground beef - 1 small onion, chopped 2 cloves of garlic, minced - 1 tsp Oregano - 1 envelope of Sazón 2 tbsp of tomato sauce Salt and fresh ground pepper to taste. Combine the ingredients for making the crust and mix well to form a soft dough. Cook the potato in water til tender, but not overcooked . Brown the ground beef with the onions and garlic in a skillet and drain. Add the rest of the ingredients and simmer for another 10 minutes over low heat. Roll out the dough on a floured surface to 1/8 inch thick. Use a small saucer or dish as a guide to cut-out the dough into circles. Place about 2 teaspoons of meat mixture in the center of each dough circle, then fold the dough over and seal the edges with a fork. Deep fry the pastelillos in hot oil til golden and drain on paper towels. *** Annatto oil can be made by heating about 1 cup of lard or vegetable shortening. Once hot add about 1/8 cup of annatto seeds. Heat for about 10 minutes then strain the oil and discard the seeds. The annatto oil keeps in the fridge indefinitely. |
Pastelillos de Carne |
Plantillas: 4 tazas de Harina de trigo - 2 cdta. Sal - 4 cda. aceite de achiote - 1 taza de Agua Relleno: 1 papa, picado - 1 lb. carne molida - 1 cebolla pequeña, picada - 2 dientes de Ajo, molido - 1 cdta. Orégano - 1 sobre de Sazón - 2 cda. Salsa de Tomate Sal y pimienta a gusto. Mezcla bien los ingredientes de hacer las plantillas para formar una masa. Cocina la papa en agua hirviendo. Cocina la carne, cebolla, y ajo en un sarten. escurra y añades todos los ingredients. Continua cocinando otros 10 minutos a fuego lento.. Prepara las plantillas con un rolillo hasta que este de 1/8 de pulgada de grueso. Usando un platillo como guía, corta las platillas en circulos. En el centro de la plantilla pones como 2 cucharaditas de carne. Dobla la plantilla por la mitad y pichas con un tenedor. Fríalos en aceite caliente haste que esten dorados. |
